I think the best part of hosting a birthday party is eating the leftover cake. And, luckily for me, my sister chose my favorite kind (so maybe she had some subtle prompting from me) for her birthday cake this year. Since I'm sure you're curious what it could be, I'll tell you. Wacky cake. Whenever I tell people about it, they look at me like I'm the wacky one. Pretty much without fail. But please, before you judge, make it and taste it yourself. So, without further ado, here's what you need:
3 cups flour
2 cups sugar
6 TB cocoa powder
2 tsp baking soda
1 tsp salt
14 TB oil (yes, I do mean fourteen. If you have an easier measurement, let me know)
2 TB apple cider vinegar
2 tsp vanilla
2 cups water ***
Mix your dry and wet ingredients separately, add them together and bake in an ungreased 9 x 13 inch pan at 350 degrees. If you follow this recipe, you'll get a pretty good cake. ***But, to really kick it up a notch and add to the lovely chocolate flavor, replace the water with coffee (instant, leftover from that morning, whatever you have will do). There's something heavenly about it that you just need to experience for yourself.
Bake for about 20 minutes or so (a darker pan is better). It will be done when the top is no longer liquidy and springs back a bit when you touch it with a finger. Lightly of course, so you don't break through. Not that I know anyone who has done that or anything... ;)
Top with real whipped cream (go big or go home) and coconut. I forgot the coconut because I was in a hurry. The real whipped cream complements the cake well, and I love that neither one tries to outdo each other in sweetness. Oh, and the pink color is actually red sprinkles that my sister went a little crazy with. Enjoy!
P.S. Does anyone know of a great dessert plate? I haven't found any I'm willing to bring home with me, so that's why the cake looks absurdly small on a normal-sized plate. The end.
I found some pretty reasonable priced white ones. And... wait for it... if you get a porcelain paint pen you can design them yourself! And if that isn't something that you're interested in, well, amazon usually has good prices on the plates anyways! :)
